5 Minute Breakfast Sandwich
In my coaching experience the two biggest challenges are always breakfast and snacks. I find myself working with teens and families on what to have for breakfast everyday. Everyone seems to understand that eating breakfast is important however there is a whole bunch of excuses as to why it is the most often skipped meal. We encourage eating something is better than nothing – a small piece of fruit or low-fat milk on the go on days that there isn’t an extra minute.
Most of us can find 5 minutes to prepare a well rounded breakfast even on weekdays. In a perfect world there would be a whole grain, a protein, and a green in there. In my breakfast sandwich I could easily throw in a few pieces of spinach. However, personally I know I will be having a green smoothie as my late morning snack so I skip the spinach in the home made breakfast sandwich and grab a handful of blueberries instead.
What’s great about this morning sandwich is how fast and easy it is to make. I whip an egg with a fork in a simple mug, add a splash of nonfat milk, and pop it into the microwave for about a minute 10 (microwave powers vary so test out your scrambled egg time in microwave for optimum cook time). The scrambled egg pops clean out of the mug in a nice round shape. We use either low calorie sandwich thins or whole wheat english muffins, light cheddar cheese, and turkey bacon. My daughter sometimes will make her breakfast sandwich open faced to cut down carbs. When I’m tracking I only count the sandwich thins as one slice of bread, they are quite thin!
While the scrambled egg is cookin’ in the microwave I cook up my turkey bacon in a non-stick pan with a bit of spray oil and toast my bread. The cheese melts oh so nicely when placed between the warm egg and the bacon.
For you vegetarians out there, try Omelet Muffins. They are savory and delicious. I like the egg omelets because I can make a bunch ahead of time and pop them in the microwave for a 30 second meal. Toast a piece of whole grain bread and you have a well rounded breakfast!
