Crispy Thin Mint Bites

A super simple chocolate treat that has 'hints of healthy', lower sugar - kids and friends will love!
  • 2 bars low sugar chocolate - I use Simply Lite, no sugar added Milk Chocolate from Trader Joe's
  • ½ cup rice crispy cereal
  • couple drops mint extract
  • couple drops pure vanilla extract
  • mini parchment cups
  • spray oil
  1. spray oil a microwave safe bowl
  2. break up low sugar chocolate into small chunks and place in a microwave safe bowl
  3. place bowl on top of a dish to prevent the bowl from getting too hot
  4. microwave chocolate in 20 second intervals
  5. stir after each microwave session
  6. microwave until chocolate is melted - for our microwave I did 3 rounds of 20 seconds each for a total of 1 minute
  7. stir in extracts
  8. stir in rice crispies
  9. spoon in chocolate mixture into mini parchment paper cups (about 1½ Tablespoons full per cup)
  10. allow to cool
  11. remove parchment cups
