Fast and Easy Protein Packed Breakfast Wraps
Weekday breakfast has to be fast and easy. Protein Packed Breakfast Wraps take about 5 minutes to make and are so delicious! Your savory loving breakfast eaters are going to gobble these right up!
Protein Packed Breakfast Wraps, like many of the recipes on OvenHug, are easy to customize. We had black beans left over from taco night last night – extra protein, why not? Scrambled eggs? Sure! I have an awesome trick for making fast scrambled eggs in the microwave. I got this ‘how-to’ from a gal I’ve been coaching a long time, Megan. I make microwave scrambled eggs All the time and I think it’s time I call them Meg’s eggs 🙂

How to make Protein Packed Breakfast Wraps with Scrambled Eggs, Black beans and Cheese:
Follow the instructions above to make quick scrambled eggs in the microwave. Melt cheese on a whole wheat tortilla. Trader Joe’s has a great whole wheat and corn flour tortilla – we keep one in the fridge and one in the freezer. If you track on the Kurbo app, rest assured that whole wheat, corn tortillas count as a yellow light. I use a pan with spray oil, lay the tortilla on it, sprinkle with low-fat or nonfat shredded cheese, and watch it melt. Stack on the microwaved eggs, black beans, a couple shakes of cumin, salt and pepper, and that’s breakfast!
Here are 3 more ideas for variations on Protein Packed Breakfast Wraps:
- Copy-cat Starbuck’s Spinach, Feta, Egg white Wrap – warm the tortilla, prepare the microwave scrambled eggs/egg whites, sprinkle with low-fat feta, add a little spinach, and cut up some sun-dried tomatoes, voila!
- Cinnamon PB Banana Wraps – warm the tortilla, smooth on some peanut butter or almond butter, add sliced bananas, sprinkle with cinnamon (watch portions on nut butters)
- Hawaiian wrap! – melt low-fat cheddar cheese on a tortilla, cut up small pieces of ham, add small pineapple chunks, yum!
