I thought about this salad while I was frolicking in the sun in southeast Georgia last week on vacation. Our good family friends invited us to join them on one of their favorite destinations, Sea Island, Georgia – what a hidden treasure of the East! The ocean water was so, so warm, I still can’t get over how warm that water was.
After our joint family fun time in Sea Island we drove over to meet my childhood friend in Savannah. We were blown away by how lively that town is! Quite a change of scene coming from the tucked away, breezy coastal vacation spot in Sea Island.
The recipe for Georgia Inspired Peachy Pecan Summer Greens Salad brings in a taste of Georgia, minus the deep fry. We ate a ton, and I mean a huge ton, of peaches. I loved River Street in Savannah with all of the quaint cobblestone streets and walkways and the decadent pecan and praline samplings in the cute little confection shops. I managed to pass up the candy apples, taffy, and some unknown power from within, the pecan pralines – man, those are good! I did give in to a couple bags of glazed pecans. We gave one to our pet sitter and the other went straight into this salad.
Just when you thought this salad couldn’t get any sweeter, drizzle on some rich, honey dressing.
I couldn’t do a recipe post about Georgia without mentioning my dear sister Roya. I didn’t get to see her this time but did think of her often. The locals were so incredibly friendly. My sister Roya tells me that her family taught her that ‘we never met a stranger’ and that’s how you feel when you’re in south Georgia! Everyone says hello, everyone goes out of their way to chat with you, and everyone wishes you well. You hear about southern hospitality but it is so much more than that. I would return to this area just to spend a little more time chatting with the sweetest of sweet people of south Georgia.

- ½ bag of spring salad mix
- ½ bag f baby spinach
- 1 fresh peach
- 1 fresh nectarine
- small handful of fresh blueberries
- ¼ cup glazed pecan halves
- ¼ nonfat feta cheese crumbles
- 3 T. honey
- ½ organic apple cider vinegar
- One round slice of red onion seperated
- wash and dry lettuces
- slice peaches and nectarines
- wash and dry blueberries
- slice and separate onion
- crumble feta
- warm honey and add cider vinegar to it, stir
- combine salad ingredients
- drizzle honey dressing
