Happy Summer Solstice! Plus Bloggers I Follow
Hi friends! Happy summer!! It’s officially here. The longest day of the year, woo hoo!!
I’m writing this post from my happy place, Kauai, where we are unwinding for 10 mellow days. This is our 4th time on the garden island and we’ve come to treat it as our sort of lake house. It’s a really big lake out there 😉 I grew up in Michigan so lakes are my frame of reference.
Our holiday routine has been to get up, go on a family jog, have breakfast, dip in the pool, come in for a bite, then hit the ocean. The best part of this spot is that right down the road you can swim and see fish of every color. It’s like swimming in an exotic aquarium. Eating fresh fruit is easy on this trip with multiple farmer’s markets to choose from. In order to stay longer on most evenings we cook and eat in. I’m the official salad girl, prepping daily salads for 9 people in our extended family – love the massive bowl I found in the cupboard here!
Although on most nights we stay in we do have a half a dozen favorite restaurants and spots that we look forward to revisiting each time we’re here. Summer break is a great time for lounging and reading. I’d like to share a few of my very favorite blogs with you! I personally subscribe to about a half a dozen blogs. They are like modern day magazines for me. I look forward to the posts popping up in my email box. Each blog author inspires me in her own way. I have cherry picked a few fine bloggers and some special posts that will help you kick off your summers.

How to Make Infused Water by Brittany of Eating Bird Food. Staying hydrated is especially important in the summer. We flew out of the Bay Area just in time to miss a big, bad heat wave. It was in the 100’s! Adding fruit and fresh herbs is a fun and healthy way to spruce up water. I love the way Brittany serves up a variety of naturally infused waters in mason jars. Imagine opening your fridge to this colorful scene. My thirst is feeling quenched already.
Next up, prepare your mouth to start watering with this Avocado Egg Salad by Lindsay Ostrom, author of Pinch of Yum. I’m loving the creative wist of subbing avocado for mayo in this classic sandwich. Avocado egg salad is a nutritious, zesty recipe I highly recommend you try. As much as I love an everything bagel, I choose whole grain/whole wheat bagel. Make your sandwich open-face and save on carbs.
Being the newly appointed salad girl, I am sharing tips on making your own salad dressing at home. Truth be told I often get by with a few squeezes of lemon juice or some balsamic – I love tasting every bit of the veggies and toppers as opposed drowning it out with sauces and dressings. Most folks are used to dressings and so I’m sharing Kurbo Health’s recipe for How to Make Your Own Salad Dressing here.
