Strawberries Wild Spinach Salad
Hi friends! Do you have spring fever? I think our teens do – it’s getting harder for them to motivate for school, homework, and tests. All they can do is dream of lazy summer days. It doesn’t help that we go on our most favorite trip right when school gets out. Heavenly Kauai is calling our names! With our girls getting older, our holidays together are starting to feel more precious as we imagine the day in the near future when they are off doing their own things. Before I get too ahead of myself let me tell you about this salad! Strawberries Wild Spinach Salad is fresh, light, tangy, sweet, summer is comin’, goodness. Strawberries are starting to be in season and I have been wild about them, buying them by the huge carton full. I put them in the girls lunches, wash and cut them up to have with our breakfasts, put them in our cocktails and mocktails, and throw ’em in this tasty salad.
Spinach salad with strawberries is nothing new. The toppings and dressings are spot on with this one though. No creamy, poppyseed dressings, oils, or sugary coated pecans so it is relatively good for you. I do throw in some low-sugar Craisins and can’t resist the balsamic glaze on this one. You can save calories by using low-fat feta instead of goat cheese. We have been really loving goat cheese lately so we splurge and use a red light for it. I put in almonds which contain the lowest fat of all nuts.

Here is everything you will need to make this salad:
- ½ pound baby spinach
- 1 pound fresh strawberries
- ⅓ cup slivered almonds
- ⅓ cup low-sugar Craisins (dried cranberries)
- ⅓ cup goat cheese crumbles
- balsamic glaze as dressing to taste
- Trim stems of fresh spinach as needed
- Trim, wash, and slice fresh strawberries
- Toss spinach with fresh strawberries
- Add almonds, Craisins, and goat cheese
- Dress with balsamic glaze
