This yummy lunch reminds me of fancy ladies lunching at the country club. Maybe it’s because one of my first jobs was waitressing at a country club in Lansing, Michigan. To help me remember orders I would guess what each person was ordering in my head. I got pretty good at it and could easily place which member had waldorf chicken salad croissant sandwich written on their their face. Flash forward I’m now a lady who lunches! Maybe not at a country club, or even very often, and usually when I’m making lunch for myself ;). Even so, I love lunching with this chicken salad, especially along with salad greens. Today’s recipe is a lightened up, modernized version of a classic chicken salad.

I appreciate pre-cooked chicken like Trader Joe’s “Just Chicken”. It’s plain, unseasoned and perfect to use in recipes.
This salad has crunch and texture. It is a fun combination of flavors. The sweetness of the apples, the savory of the chicken and walnuts, and the sour of the pomegranate work well together.
A trick of the trade is to swap heaps of mayo with dabs of non-fat, plain yogurt. I do include a couple of spoons of light Miracle Whip for the taste.

Waldorf Chicken Salad

Ingredients
- 1 pound cooked chicken, chopped
- 1 apple, cored and chopped
- 1/4 lemon
- 1/4 cup walnuts, coarsely chopped
- 1/4 cup pomegranate arils
- 1/4 cup non-fat, plain yogurt
- 2 Tablespoons light mayo (I like light Miracle Whip)
- 1 Table spoon chopped dill (fresh or dried)
- 1 teaspoon chopped chives (fresh or dried)
- salt and pepper to taste
Instructions
- Chop cooked chicken into 1 inch pieces
- core and chop apple to 1/2 inch cubes
- squeeze lemon juice to coat apples and preserve their color
- chop walnuts
- open and clean pomegranate arils from the fruit
- Stir all ingredients together in a large bowl
- Add seasonings
- Transfer to serving dish
- Garnish with fresh herbs

Yummy. My chicken salad looks a lot like your Waldorf. I like mine with grapes, celery and shredded carrots. I’m going to try yogurt next time. I usually use mayo with a splash of vinegar to take down the sweetness. Keep up the good work, Miss Bita
